Garlic Grilled Cheese

Quick garlic flavored grilled cheese sandwich in a panini press or the cheaper version built on a slant. You have to really like garlic to like this sandwich. You could also use about a teaspoon of finely chopped onion, shallot, green onion or some other allium if you prefer, or half a teaspoon of fresh herbs like sage or parsley. Up to you.

Ingredients

  • 1 clove of garlic, pressed or minced
  • 6 slices of bread, any kind will do, this time I used sourdough wheat
  • About a handful of sliced cheese about ¼ thick, or a handful of grated cheese, let’s say it’s 1/3 cup plus a couple tablespoons
  • 1 and ½ tbsp extra virgin olive oil
  • 1 and ½ tbsp sunflower oil
  • Chopped herbs, optional

Directions

  1. Press or slice the garlic into a small bowl and add the oils. Stir with a small spoon
  2. Plug in and heat up the panini press or sandwich grill
  3. Assemble the sandwiches with about ½ inch (about a centimeter) worth of cheese between each slice of bread and the top slices still off. Get a plate ready.
  4. Spoon the garlic pieces from the oil as evenly as you can over the cheese on each cheese-topped slice. If you want to add even more cheese, or chopped herbs, or whatever, you can
  5. Top with a slice of bread and shove each sandwich in the panini press. Cover with the lid and wait 3 minutes.
  6. Take the sandwiches out of the grill with either tongs or a couple forks, or a spatula, whatever works best for you, and put them on a plate.
  7. Gently spoon the oil over the sandwiches as evenly as you can, spreading it with the back of the spoon, flip over the sandwiches and oil the other side, then put them back into the panini press
  8. Wait 3 and a half to 4 minutes, depending on how crunchy you like your sandwiches, how golden brown, etc. check by lifting the lid after 3 minutes then keep cooking by adding an additional minute each time til it’s as done as you want
  9. Serve. Goes well with fruit, salad, vegetables, chips, grapes, whatever
